What’s the difference between Scalar structured water and water structured from these vortex devices. Am I hearing right structuring water erases its memory to a natural state?

Yes, structuring will erase the information in water, while imprinting adds. Water readily will take on information.

Just holding a glass will imprint your energetics into the water.

If you have a pitcher of water and take it into a room with 4 people sitting in opposite corners you can run a cool experiment. You split the water up amongst the 4 and have them make drops on multiple slides. From here, flash freezes the samples and then examines the resulting crystalline structure.

The drops from each person will have a particular pattern and even if mixed up, a 3rd party would be able to group them and identify who made which drops.

Scalar’s output coil appears to be doing both. It alters the energetics of the water to match that of water that has been structured using known methods to erase the memory of the water and raises the potential energy of the water. Then it can also imprint information of any biological information that is on the receiver.

It appears that while the water is not in a state of spin physically, the output coil has a spinning toroidal field that is essentially still spinning the water in an energy vortex.
